– 1 cup granulated sugar

– 2 large eggs

– 2 teaspoons vanilla extract

– 2 ½ cups all-purpose flour

– 1 teaspoon ground cardamom

– ½ teaspoon baking powder

– ¼ teaspoon salt

– 3 tablespoons crushed pistachios

– Optional: powdered sugar for dusting

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

4. In a separate bowl, whisk together the flour, ground cardamom, baking powder, and salt.

5. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Be careful not to overmix.

6. Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

7. Gently flatten each cookie with the bottom of a glass or the palm of your hand. Sprinkle crushed pistachios and press gently.

8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

9. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

10. Optional: Dust the cooled cookies with powdered sugar for an extra touch of sweetness.

11. Enjoy your homemade cardamom cookies with a cup of tea or coffee!
